Michael Lugo
CHEF / OWNER, VIVA HOSPITALITY
Chef Michael Lugo, a self-taught culinary artist from Puerto Rico, is renowned for blending modern techniques with traditional influences. Based in St. Augustine, Florida, he leads Viva Hospitality, which includes Michael’s, an acclaimed steak and seafood restaurant, and Pesca Rooftop, a Latin-inspired bar in Vilano Beach. Inspired by his Puerto Rican heritage and his grandmother’s cooking, Chef Michael’s latest venture, La Nouvelle, introduces French Nouveau cuisine to St. Augustine, offering an elevated bistro experience reminiscent of the streets of Paris.
Committed to sourcing local, sustainable ingredients and giving back to the community, Chef Michael has been recognized by local publications and featured on Food Network alongside icons like Emeril Lagasse and Guy Fieri. His passion for exceptional dining continues to define his celebrated culinary journey.
Josh Agan & Intan Sari-Agan
Chef Josh Agan and his wife, Intan Sari-Agan, are the power couple behind Jacksonville-based Routes: Culinary Travels, northeast Florida’s premier catering and private chef service.
Chef Josh’s journey began in his home state of Vermont, at New England Culinary Institute- the inception for a career spanning over 30 years in top tier restaurants and hotels of Colorado, California, and Washington. Since arriving in Florida in 2010, he established landmark Jacksonville establishments including Flying Iguana and Coop 303.
Intan is a self-taught baker with roots in Bali Indonesia. Her impeccable service & hospitality combined with a deft hand creating special occasion cakes, plated desserts and a variety of delectable baked goods is truly the icing on the cake for this dynamic duo’s success.
With their passion for travel, they relish the opportunity to share their culinary journeys and take their clients along for the ride. From annual appearances at the Masters, personal chef for numerous celebrities, local chef collaborations and pop ups, weddings and intimate multi course wine dinners, their versatility is boundless.
Natasha Olivera
CULINARY DIRECTOR, VIVA HOSPITALITY
Chef Natasha Olivera, the Director of Culinary at Viva Hospitality, has built a reputation for her passion and artistic vision in the culinary world. Born and raised in South Africa, Chef Tash grew up surrounded by the country’s vibrant diversity of cultures, flavors, and traditions, which inspired her love for food and her desire to create dishes that tell a story. Her upbringing instilled in her a deep appreciation for the power of food to bring people together, a value that continues to guide her culinary philosophy.
Her experiences have shaped an innovative approach to cooking, rooted in sustainability and creativity. As a leader, Chef Tash fosters a collaborative environment, mentoring her team to continually refine their skills and push culinary boundaries. Every dining experience is the result of this collective effort — a passionate team working together to deliver excellence.
Matthieu “Frenchy” Landillon
Born in Marseille, France, Chef Matthieu “Frenchy” Landillon grew up surrounded by the vibrant colors of the Mediterranean coast and the bounty of its markets. Inspired by the beauty of his homeland and its rich culinary traditions, he trained at Le Cordon Bleu in France and the Culinary Institute of America. His career has taken him from England to New York, where he was part of several Michelin-starred teams, mastering his craft in world-class kitchens. While deeply rooted in French tradition, Chef Landillon’s culinary knowledge extends far beyond, drawing on global flavors and techniques to create dishes that surprise and delight. Now making Saint Augustine his home, Frenchy works alongside his longtime friend Michael, sharing his passion for authentic cuisine with every guest. His food is every bit as interesting and captivating as his personality, leaving a lasting impression long after the last bite.
Henry Salgado
A familiar face in the Central Florida food scene, Chef Henry Salgado, from the acclaimed Spanish River Grill and Txokos Basque Kitchen is excited to join the James Beard Foundation Rooted in Excellence Dinner.
Salgado, a fifth generation Floridian, has been nationally recognized for his talent in the kitchen with two James Beard Semi-finalist nominations for Best Chef South in 2012 and 2014. Chef Salgado has received much recognition for his Spanish inspired cuisine for both restaurants located in New Smyrna Beach and Orlando, Florida, yet in spite of his Latin heritage, he has a deep love of the South from his early days at the once famous Horseradish Grill in Atlanta.
